Cold Brew Is Not Iced Coffee

Cold brew is coffee steeped in cold or room-temperature water for 12 to 24 hours, producing a concentrate that is naturally smoother, sweeter, and 67% less acidic than hot-brewed coffee. The slow extraction chemistry at low temperatures simply cannot produce the bitter, high-acid compounds that hot water extracts in minutes.

The Basic Cold Brew Recipe

Start with a coarse grind — the consistency of rough sea salt. Use a ratio of 1 cup of coffee to 4 cups of cold water for a concentrate (dilute 1:1 with water or milk when serving), or 1 cup to 8 cups of water for ready-to-drink strength. Combine in a pitcher or mason jar, stir well, cover, and refrigerate for 12 to 24 hours. Strain through a fine mesh strainer or cheesecloth. The resulting concentrate keeps in the refrigerator for up to two weeks.

Choosing the Right Coffee

Almost any coffee works for cold brew, but certain origins shine. Guatemalan and Colombian coffees produce cold brew with a beautiful chocolate-caramel depth. Ethiopian Yirgacheffe produces a bright, fruit-forward cold brew unlike anything else. Avoid very light roasts, which can turn sour in cold brew. Medium to medium-dark roasts are the sweet spot.

Flavor Variations

Cold brew is a blank canvas. Add a cinnamon stick to the steeping jar for a warm spiced version. Add vanilla bean paste for a dessert-style concentrate. Steep with a few whole cardamom pods for a Middle Eastern-inspired cold brew. Sweeten with piloncillo syrup, kuromitsu, or coconut sugar for global flavor profiles straight from your cup.
